This fresh spring drink gets a bold visual upgrade with a splash of berry flavor! The base remains tropical with sweet pineapple juice and fresh mint, but we’re adding a top layer of cranberry or hibiscus for a vibrant, ombre effect that stuns in the glass. It’s still light, bubbly, and perfect for spring brunches or baby showers — just with a bit more flair.

Ingredients:

  • 1 ½ cups pineapple juice (chilled)
  • 1/2 cup soda water or sparkling water
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh mint leaves
  • 1/4 cup cranberry juice or hibiscus tea (chilled)
  • Crushed ice
  • Optional: pineapple wedges, mint sprigs, lime slices for garnish

Instructions:

  1. In a pitcher or shaker, gently muddle the mint leaves.
  2. Add pineapple juice and lime juice. Stir to combine.
  3. Fill a tall glass with crushed ice and pour the juice mixture in, leaving room at the top.
