- Juice of 2 limes
- 3 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- For the Fajitas:
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 1 tbsp olive oil
- Optional: 1 jalapeño, thinly sliced (for extra heat)
- To Serve:
- Warm flour or corn tortillas
- Fresh cilantro leaves
- Lime wedges
- Salsa or sour cream (optional)
Instructions:
- Marinate the Beef:
In a bowl, combine the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Add the thinly sliced beef, tossing well to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor). - Prepare the Vegetables:
While the beef is marinating, slice the bell peppers, onion, and jalapeño (if using). Set aside. - Cook the Beef:
